AI Voice Recognition Limitations and Workarounds

Last updated: March 23, 2026

Maple's AI voice agent handles the majority of calls accurately, but like any speech recognition system, it has known limitations. This guide covers the most common voice recognition issues you may encounter, explains why they happen, and provides actionable workarounds to improve your experience.

Issue 1: AI Misrecognizes Specific Words

Symptom

The AI mishears certain words during calls, substituting them with similar-sounding but incorrect alternatives. For example, "hostess" may be transcribed as "hostages," or "staff" may be heard as "sad." When reviewing call transcripts, you may notice words and phrases that don't make sense or are clearly incorrect.

Cause

Speech recognition models interpret audio based on statistical probability. When a word is uncommon in typical restaurant call contexts, or when it sounds similar to a more frequently used word, the AI may select the wrong match. Words that are short, have soft consonants, or overlap phonetically with other words are especially prone to misrecognition.

Fix

  1. Report specific misrecognized words to Maple Support. Include the exact word that was spoken and what the AI heard instead. The team uses these examples to tune recognition accuracy — many previously misheard words have already been corrected through this feedback loop.

  2. Check your call transcripts periodically. Reviewing transcripts in the Maple Portal helps you identify patterns of misrecognition early so they can be addressed.

  3. Be aware that ongoing improvements are being deployed. Maple regularly releases transcription accuracy enhancements that improve word recognition over time. If you reported an issue previously, it may already be resolved in the latest update.

Issue 2: AI Struggles with Accents and Non-Standard English

Symptom

The AI has difficulty accurately capturing orders or understanding requests when callers speak with accents that differ from standard American English, or when speakers have unique speaking habits (e.g., speaking very quickly, mumbling, or using non-standard phrasing). This can lead to incorrect order capture or communication breakdowns.

Cause

Speech recognition models are trained primarily on standard American English speech patterns. When a caller's pronunciation, cadence, or intonation differs significantly from this baseline, the AI's confidence in matching spoken words to its vocabulary drops, resulting in errors.

Fix

  1. Report accent-related issues to Maple Support with details. Let the team know the general nature of the accent or speaking pattern involved (e.g., "many of our callers are native Spanish speakers"). This helps engineering prioritize improvements for specific accent profiles.

  2. Leverage recent transcription enhancements. Maple has deployed targeted improvements specifically designed to better handle accents, varied speaking habits, and misunderstandings. If you experienced issues in the past, test again — you may see significant improvement.

  3. For restaurant staff interacting with the system, encourage clear, moderate-paced speech when speaking to the AI. While this isn't always possible with customers, it can help for internal use cases.

Issue 3: Background Noise Interferes with Call Processing

Symptom

When there is background noise during a call — such as a TV playing, other conversations, kitchen sounds, or street noise — the AI has difficulty isolating the caller's voice. This leads to incorrect order capture, missed words, or confused responses.

Cause

The AI processes all audio it receives on the call. When ambient sounds are present, the system may attempt to interpret background speech or noise as part of the caller's request, leading to garbled or inaccurate transcriptions. This is a fundamental challenge in speech recognition that requires ongoing engineering improvements.

Fix

  1. Advise callers to move to a quieter environment if possible. While you can't control every caller's environment, if your staff is placing test calls or interacting with the system, minimizing background noise will significantly improve accuracy.

  2. If you notice a pattern of noise-related issues, report them to Maple Support. Include details about the type of background noise (e.g., "busy dining room," "TV in background") so the engineering team can factor these scenarios into future improvements.

  3. Understand that this is an active area of development. Background noise handling requires engineering-level improvements rather than configuration changes. Maple's team is continuously working to improve noise isolation in the AI system.

Issue 4: AI Cannot Recognize Non-English Menu Item Names

Symptom

The AI fails to understand menu items when customers use authentic non-English pronunciations. For example, a caller saying "Pollo a la Crema" with Spanish pronunciation may not be recognized, even though the item exists on your menu. The AI may misinterpret the item or fail to match it entirely.

Cause

Maple's AI voice recognition defaults to English. While it can understand English translations of non-English words (e.g., it would understand "chicken and cream"), it cannot reliably process authentic Spanish, Chinese, Italian, or other non-English pronunciations of menu item names.

Fix

  1. Add English or phonetic descriptions to menu items in the Maple Portal. Rather than renaming items in your POS (which would create duplicate descriptions on kitchen screens), update the description field for each non-English menu item in the Maple Portal. For example:

    • Menu item name (unchanged): "Burrito a la Mexicana"

    • Description (added): "Burrito Mexican"

    • Menu item name (unchanged): "Pollo a la Crema"

    • Description (added): "Chicken with cream sauce"

  2. Use phonetic English spellings in descriptions for items that don't have a clean English translation. Think about how a customer might say the item in English and add that as the description.

  3. Do NOT rename items directly in your POS to avoid duplicate or confusing descriptions appearing on kitchen display screens. Always use the Maple Portal's description field for this workaround.

  4. Be aware of upcoming language support. Maple is actively developing additional language models (including Chinese) to expand native non-English recognition capabilities. Contact Support to learn about availability for your language needs.

Issue 5: Call Transcripts Contain Numerous Errors

Symptom

When reviewing call transcripts in the Maple Portal, you find widespread inaccuracies — words that don't make sense, phrases that are clearly wrong, or entire portions of the conversation that are poorly transcribed.

Cause

Transcript errors are typically a compounding result of the issues described above: accents, background noise, uncommon words, and non-English terms all contribute to lower overall transcript quality. In some cases, poor phone audio quality or callers speaking very softly can also be a factor.

Fix

  1. Share specific transcript examples with Maple Support. The most effective way to drive improvements is to flag specific calls or transcript segments that contain errors. The team has confirmed that many previously reported issues are now relatively easy to fix once identified.

  2. Take advantage of recent improvements. Maple has deployed general AI improvements and a faster AI model that enhance recognition accuracy. If you noticed transcript issues in the past, review recent transcripts to see if quality has improved.

  3. Combine multiple workarounds. If your restaurant has non-English menu items and callers with varied accents, applying the menu description workaround (Issue 4) alongside reporting accent-related patterns (Issue 2) will yield the best results.

General Best Practices

  • Report issues early and with specifics. The more detail you provide (exact words misheard, type of accent, nature of background noise), the faster the engineering team can address the problem.

  • Re-test after updates. Maple deploys recognition improvements regularly. If you reported an issue, check back within a week or two to see if it has been resolved.

  • Use the Maple Portal description fields as your primary tool for helping the AI understand your menu — it's the most effective workaround available to you today.
